BESAN OMELETTES WITH SPROUTS FILLING
Omelette Batter

  • 1 1/2 cup gram flour (besan)
  • 4 green chillis
  • 1 table spoon red chilli powder
  • 1/4 table spoon turmeric powder
  • 1/4 tea spoon carom seeds (ajwain)
  • 3 table spoons yogurt
  • 1 tea spoon chopped fresh coriander leaves

Salt to taste
Oil for shallow frying butter, to serve

filling

  • 1 cup sprouted moong, blanched
  • 1 table spoon oil
  • 2 medium onions, chopped
  • 2 medium tomatoes, seeded and chopped
  • 2 green chillis, chopped
  • 1/2 tea spoon turneric powder
  • 1/2 tea spoon red chilli powder
  • 1/2 tea spoon chaat masala
    Salt to taste
  • 1 tea spoon lemon juice
  • 1 tablespoin chopped fresh corinder leaves

For the omelette batter, mix together the gram flour, green chillis, chillis powder, turmeric powder, carom seeds, yogurt, coriander leaves, and salt. Add one and one and one fourth cup of water and whisk to smooth batter of pouring consistency. rest the batter for about fifteen minutes.

to make the filling, heat the oil in a pan, add the onions and tomatoes, and saute, for two minutes.

add the green chilles and sprouts and continue to satue for half a minutes. Add the turmeric powder, chilli powder, chaat masala, salt, lemon juice, and corinder leaves, and sauté for one minute. Remove from heat and set a side.

Heat a tawa, grease it with a little oil and pour and a little batter onto it. Spread in to a thin round with the back of the ladle and cook till golden brown on both sides.

place some filling in the centre and roll up. Serve hot with a dollop of butter.
